Dr. Seuss’s Birthday is a nationwide reading celebration that takes place annually on March 2nd. This year the Lebanon Downtown Association is celebrating with their First Friday Event from 5:30-7:30pm. Comforting Kielbasa Potato Soup

March is coming in cold and wet. Warm up with a comforting bowl of this soup reminiscent of a sausage & pierogies dinner.

Ingredients:

1 Tbsp olive oil
1 medium yellow onion, chopped
2 medium carrots, peeled and chopped
1 Tbsp minced garlic (about six cloves)
13-14 oz smoked sausage or Polska kielbasa, cut into quarters lengthwise, then chopped
2 lbs potatoes, cubed
4 cups chicken broth
1 tsp parsley
1/2 tsp seasoned salt
Black pepper, to taste
1/2 cup sour cream
1 cup cheddar or cheddar-jack cheese
8 oz spinach

March is national Deep-Vein Thrombosis Awareness Month, a public health initiative aimed at raising awareness of this commonly occurring medical condition and its potentially fatal complication; pulmonary embolism. According to the American Heart Association up to 2 million Americans are affected annually by DVT, more commonly known as blood clots.

Deep vein thrombosis (DVT) is a medical condition that occurs when a blood clot forms in a deep vein. These clots usually develop in the lower leg, thigh, or pelvis, but they can also occur in the arm.

Symptoms –
– throbbing or cramping pain in 1 leg (rarely both legs), usually in the calf or thigh.
– swelling in 1 leg (rarely both legs)
– warm skin around the painful area.
– red or darkened skin around the painful area.
– swollen veins that are hard or sore when you touch them.

Post COVID patients have an increased risk of blood clots, especially if they had a severe case.
