June 1st -4th

The Lebanon Strawberry Festival is a community wide celebration held each year during the first full weekend in June. Whether it is watching the Saturday night fireworks display, enjoying a complimentary piece of the World’s Largest Strawberry Shortcake, taking in one of the parades, or just sitting back and relaxing on the lawn to watch some entertainment on the main stage, the Strawberry Festival offers something for everyone, and for every budget. So be sure to mark your calendars each year for the first full weekend in June, and plan on coming out to Cheadle Lake Park to celebrate.

Join us in celebrating downtown on June 2nd for the First Friday Event happening 11:00-7:00. We’ll be one of the businesses on the passport and are happy to chat about what we have to offer.

According to the National Cancer Institute, an individual is considered a cancer survivor from the time of diagnosis, through the balance of his or her life. In June we honor and remember those in our lives battling cancer by acknowledging the difficulties they’ve overcome and reminding them how much we care. Set aside some time this month to reach out to the warriors in your life. Defeating cancer is a team effort.

Strawberry Watermelon Feta Salad

There are so many strawberry recipes out there. You can easily find a recipe for breakfast, brunch, lunch, dinner and so very many desserts.

When I think of strawberries, I tend to think of desserts or jam. I have spent a lot of time making freezer jam (and enjoying the results). Right now, though, I’m craving fresh raw fruits and veggies from the garden. So this month I’m offering you this summer salad recipe. It’s bright and fresh, with a variety of textures.

3 cups strawberries
3 cups cubed watermelon
2 avocadoes, diced (optional)
4 ounces arugula (optional)
2 Persian cucumbers
1 cup feta, cubed
8-9 mint sprigs, shopped
¼ cup chopped pistachio (or sliced almonds)
DRESSING:
¼ teaspoon kosher salt
2 tablespoons lime juice + the zest of 1 lime
2 teaspoons sugar
¼ cup olive oil

DRESSING: In a small bowl, combine all the ingredients listed. Whisk together and set aside for now. If the dressing separates at any point, simply whisk to combine.

TOSS AND SERVE: Keep dressing and salad separate if you aren’t serving immediately. Add the arugula to the bottom of a large bowl. Top with watermelon, strawberries, avocados, cucumbers, feta, mint, and pistachios. Dress the salad with half of the dressing and toss to combine. Taste and adjust with more dressing as desired. Serve once dressed.
